Stuffed Peppers
Swiss Chard and Creamy Pasta
Ingredients:- 1 lb. swiss chard
- 1 tbsp olive oil
- 2 cloves garlic, chopped
- 1/4 cup chopped onion
- 2 large tomatoes, chopped
- 1/2 cup sour cream or plain yogurt
- 1/2 cup lowfat milk
- 1/4 cup parmesan/romano cheese (your pick)
Directions:
Wash swiss chard, cut into small pieces. Heat oil in large 2-quart saucepan over medium-high heat, 1-2 minutes. Add swiss chard, garlic and onion, cooking 1-2 minutes, stirring occasionally. Add tomatoes, sour cream (or yogurt), milk, parmesan cheese. Stir until blended and cheese melts. Serve over pasta or rice. Add salt and pepper to taste.
