Stuffed Peppers
Mustard Roasted Potatoes
Ingredients:- 2 lbs potatoes
- 2 spring onions (or 1 small onion)- chopped
- 3 garlic cloves -minced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 cup Dijon mustard
- 2 tbsp melted butter
- 3 tbsp fresh thyme- chopped
- 3 tbsp fresh Rosemary- chopped
- Salt & pepper to taste
Directions:
Combine olive oil, melted butter, lemon juice, onion, garlic, mustard, thyme, Rosemary, salt, and pepper in a bowl and mix well. Cut washed potatoes into small chunks and toss in dressing. Bake at 425 degrees for 40 minutes stirring about half way through.
